Instructions
Cook ramen noodles according to package directions; drain and set aside.
Bring a pot of water to a gentle boil, add eggs, and cook for 7 minutes; transfer to ice water, peel, and halve.
In a pot, heat chicken or seafood broth with soy sauce, garlic, and ginger.
Add snow peas and cook for 2-3 minutes until crisp-tender.
Sauté shrimp in a separate pan until pink and cooked through.
Assemble bowls: divide noodles, pour hot broth, top with shrimp, snow peas, and halved soft-boiled eggs.
Garnish with black sesame seeds and chopped chives if desired.
